Caramel Corn

This is an excellent Caramel Corn recipe.  It is adaptable by adding peanuts of other nuts, but often I don't add anything - it is too good.

  • 8 - 9 quarts popped corn
  • 2 cups brown sugar
  • 1 cup butter
  • 3/4 tsp salt
  • 1/2 cup corn syrup
  • 1 tsp vanilla
Boil all the ingredients, except popcorn, together for 5 minutes, stirring occasionally.  Remove from heat, add 1/2 tsp baking soda.  Stir in quickly and pour over popcorn.  Mix well.   Stir while mixture is cooling to keep the pieces broken up.
